(As the saying goes, food is the paramount necessity of the people. Chinese people always pay attention to diet. But diets are a culture, too. Liang Xiaosheng, a Chinese famous writer, said, "What is culture? Eating is also culture." Like China's history, this country's cooking culture is long-standing and long in history and tradition. There are specific famous dishes in every province or city, which are well-known at home and abroad. In Beijing, for example, you certainly want to taste the roast fish of Quanjude and authentic instant-boiled mutton; in the land of abundance Chengdu, you may go to taste those renowned snacks such as Sichuan noodles with peppery sauce, Malatang and pork lungs in chili sauce. Chinese snacks are indeed so countless that you cannot finish tasting all of them.)
