Recipe of the week: Asian hot pot • This delicious and very filling vegan stew is the perfect dish for a cold winter’s day, says Hugh Fearnley-Whittingstall. The mushrooms are fried “hard” to start with, creating a lovely caramelised exterior that really adds to the flavour of the dish. The miso paste is optional, but it does give the hot pot a boost of savoury, “umami” character.
