BREAKFAST WITH CORA tells the story of Cora Tsouflidou, the founder of the hugely popular Chez Cora restaurant chain. From her childhood on the GaspÈ Peninsula, to her failed marriage, to the opening of her first restaurant, to the creation of the Chez Cora Foundation, Cora shares with us her experiences as a woman, a mother and an entrepreneur. In May 1987, as a single mother with three teenagers, Cora bought a defunct snack bar in Ville Saint-Laurent. After only a few months of operation, she transformed it into a whole new breakfast concept in Quebec, specializing in fruit, omelettes, pancakes, and French toast. Inspired by family traditions, customer requests and suggestions from her children, Cora created new breakfasts that blended the best of the traditional with new health food trends. Today Cora is building one of the fastest-growing restaurant chains in Canada. Since 1987, the Quebec-based entrepreneur has overseen the launch of over 100 locations across Canada.
