"民以食为天"，食物是人类赖以生存繁衍、维持健康的基本条件之一。改革开放以来，我国食品产业的内涵与外延发生了历史性的变革，已从"加工业"扩展到"大食品产业体系"时代。食品产业在国民经济和社会发展中的作用举足轻重，成为我国国民经济的重要支柱。中国共产党十六届五中全会更明确提出，要大力推动农业现代化和社会主义新农村建设，统筹城乡经济社会发展，从我国经济发展的战略高度，把发展食品工业、大力开展农产品深加工与解决"三农"问题密切结合起来，在政策上给予大力扶持，从而为食品产业的大发展创造良好的环境。"大食品产业体系"下的现代食品产业的发展不仅需要大量食品工程和加工技术型人才，更迫切需要既懂食品工程与加工技术又熟悉食品产业经营管理知识的复合型人才。可见食品产业的迅猛发展对食品经济管理人才的需求越来越大，对食品经济管理人才的要求也越来越高。但是，国内目前还没有专门针对食品经济管理专业的教材，迫切需要编写一套兼具理论性和实践性的教材。上海海洋大学是国内第一个开设食品经济管理本科专业的高等学校，因此，编写一套反映当今食品经济管理的发展现状、符合创新创业型人才培养要求的食品经济管理专业系列教材，是我们义不容辞的责任和义务。这套教材正是在客观环境和现实需要的双重驱动下，在上海海洋大学有关领导的指导下，在相关教师的共同努力下，由中国轻工业出版社组织编写而成。本系列教材力求反映最新的食品经济管理的理论与实践，注重配套教材的系统性。在写作方式上，注重对学生主动思考能力的启发和创新思维能力的培养，希望达到促进教学质量提高，为社会输送高素质食品经济管理创新型人才的目标。随着学科的不断发展，其体系结构还有待不断完善，内容也需要不断修改补充。由于时间紧，任务重，加之该教材体系初次建立，使用效果怎样，尚需在实践中接受检验。("Food is the paramount necessity of the people".
