"民以食为天",食物是人类赖以生存繁衍、维持健康的基本条件之一。改革开放以来,我国食品产业的内涵与外延发生了历史性的变革,已从"加工业"扩展到"大食品产业体系"时代。食品产业在国民经济和社会发展中的作用举足轻重,成为我国国民经济的重要支柱。中国共产党十六届五中全会更明确提出,要大力推动农业现代化和社会主义新农村建设,统筹城乡经济社会发展,从我国经济发展的战略高度,把发展食品工业、大力开展农产品深加工与解决"三农"问题密切结合起来,在政策上给予大力扶持,从而为食品产业的大发展创造良好的环境。"大食品产业体系"下的现代食品产业的发展不仅需要大量食品工程和加工技术型人才,更迫切需要既懂食品工程与加工技术又熟悉食品产业经营管理知识的复合型人才。可见食品产业的迅猛发展对食品经济管理人才的需求越来越大,对食品经济管理人才的要求也越来越高。但是,国内目前还没有专门针对食品经济管理专业的教材,迫切需要编写一套兼具理论性和实践性的教材。上海海洋大学是国内第一个开设食品经济管理本科专业的高等学校,因此,编写一套反映当今食品经济管理的发展现状、符合创新创业型人才培养要求的食品经济管理专业系列教材,是我们义不容辞的责任和义务。这套教材正是在客观环境和现实需要的双重驱动下,在上海海洋大学有关领导的指导下,在相关教师的共同努力下,由中国轻工业出版社组织编写而成。本系列教材力求反映最新的食品经济管理的理论与实践,注重配套教材的系统性。在写作方式上,注重对学生主动思考能力的启发和创新思维能力的培养,希望达到促进教学质量提高,为社会输送高素质食品经济管理创新型人才的目标。随着学科的不断发展,其体系结构还有待不断完善,内容也需要不断修改补充。由于时间紧,任务重,加之该教材体系初次建立,使用效果怎样,尚需在实践中接受检验。("Food is the paramount necessity of the people". Food is one of the basic conditions under which human beings survive, reproduce and maintain health.Since the Reform and Opening-up Policy, the food industry in China has gone through historical revolution in both its connotation and denotation, expanding from "processing industry" to "large food industry system".Food industry plays a decisive role in national economy and social development and has become the main pillar of the national economy.The Fifth Plenary Session of the 16th Central Committee of the CPC required that we should greatly promote agricultural modernization and construction of New Socialist Countryside, balance economic and social development in urban and rural areas, closely combine development of food industry, vigorous development of deep processing of agricultural products and dealing with three rural issues (agriculture, rural areas and farmers) and provide substantial support by policy for the combination so as to create a good environment for the great development of food industry.The development of modern food industry in the "large food industry system" not only requires technical talents in food engineering and processing, but also demands more urgently versatile talents who know both food engineering and processing techniques and knowledge related to operation and management in food industry.Thus the rapid development of the food industry is in an increasing demand of both the quantity and the quality of business-management talents.But since there has not been any textbook specially developed for food business management so far in China, the need for a set of textbooks with both theories and practices is quite urgent.Shanghai Ocean University is the first higher institution in China that set up undergraduate program in food business management, therefore we're duty-bound to take the responsibility and obligation to develop a series of textbooks that can reflect the development status of food business management today and can meet the cultivation requirements of innovation and entrepreneurial talents.Driven by both objective environment and practical needs, this set of textbooks were compiled and written by China Light Industry Press based on related leaders from China Ocean University and collaborative efforts of related teachers.This set of textbooks is designed to reflect latest theories and practices in food business management with a focus on its systematicness.In writing style, it emphasizes on inspiring students' ability to think actively in the hope to improve education quality and cultivate high quality innovative talents food business management to the society.With the continuous development of the discipline, its system and structure are to be gradually perfected and the contents are to be revised and supplemented.Due to a tight schedule and a heavy task, besides, plus the pioneering nature of the textbook system, its effect still needs to be...
