中国传统文化作为中国各族人民智慧的结晶始终与灿烂的中国文明历程紧密地联系在一起, 显示了人类的智慧高度, 为我国各族人民构筑起安身立命的精神家园。中国传统文化所蕴含的中华民族的强烈认同感是超越社会变迁、维系情感交融的特殊纽带。青年学生学习和利用好中国传统文化有利于培养爱国主义精神, 凝结和绵延民族精神, 对实现中国梦有不可估量的作用和意义。为了加强青年学生对中国传统文化的了解, 拓宽其知识视野, 提高人文素养和艺术涵养, 形成个体审美能力, 达到发展综合素质的目的, 担负起传承中华传统文化的重任, 我们特编写了适合大中专职业院校学生使用的综合性中国传统文化读本——— 《中国元素》。全书按大中专院校人文素质教育教学要求, 分为中国饮食文化、中国名胜古迹、中国民俗传统、中国文学艺术和附录五篇, 主要介绍了具有中国典型特色的饮食习俗、佳肴药膳、名山秀园、节气节日、生肖谱牒、古诗歌赋、书法国画、京剧昆曲等元素; 每篇由若干章节组成, 便于根据实际教学需要选择相应内容。本书具有以下特点:一、内容丰富, 知识面宽而不难, 具有很强的实用性和可操作性。从素质教育的高度出发, 在编写过程中自觉体现素质教育的理念, 将中国传统文化中最具代表性、最灿烂的元素钩沉出来, 优化教学内容, 使得本书能区别于一般的专业教材。二、配有相关的图片, 图文并茂, 具有一定的趣味性和观赏性;每单元都编写了配套的难易适中的练习题, 实现了教材知识学习的功能性, 使得本书又有别于一般的文化普及读本。三、参与本书编写人员大多为长期从事文化素质教育、公共艺术教育的专职教师, 具有丰富的教学实践经验。确保了本书编写的科学性、准确性、可读性、趣味性和权威性。此外, 本书配有双语附录, 教学过程中还可以更好地配合课堂双语教学使用。本书由江苏食品药品职业技术学院王霞晖担任主编并统稿, 淮阴师范学院陈士桂教授担任主审, 第一篇由王霞晖编写, 第二篇由谢匀编写, 第三篇由王贺玲、王静编写, 第四篇由许韧编写。淮安京杭旅行社葛启军、餐饮业国家级(一级) 评委周亚东对书稿也提出宝贵的修改意见, 在此表示感谢。在编写过程中, 借鉴参考了许多国内同行论著、研究成果和网上资料, 在此对原作者谨致衷心感谢。由于编者水平有限, 书中疏漏之处在所难免, 敬请广大读者批评指正, 以便我们进一步提高。(As the essence of wisdom of all ethnic groups in China, Chinese traditional culture is always connected with the splendid course of Chinese civilization, showing the height of human wisdom and constructing the spiritual homeland where people of all ethnic groups can settle down.The strong sense of identification of Chinese nation contained in Chinese traditional culture is a special bond that transcends social change and maintains emotional integration.Youthful students' learning and making good use of Chinese traditional culture can help foster patriotic spirit, condense and extend the national spirit, and can be immeasurably useful and meaningful to realize Chinese Dream.We compiled Chinese Elements-a comprehensive reader of Chinese traditional culture-for students in vocational schools and colleges in order to strengthen youthful students' understanding of Chinese traditional culture, broaden horizons of their knowledge, improve humanistic quality and arts cultivation, shape individual aesthetic capability, achieve the goal of developing their comprehensive quality and shoulder on the responsibility of passing on Chinese traditional culture.In accordance with teaching requirements for humanistic quality education of higher education institutions and vocational schools and colleges, it consists of 5 sections: Chinese Food Culture, Chinese Places of Interest, Chinese Folk Traditions and Customs, Chinese Literature and Art and Appendix, mainly introducing the elements that have typical Chinese characteristic such as diet customs, cuisine and tonic diet, famous mountains and delicate gardens, solar terms and festivals, Chinese Zodiac and genealogy, ancient poetry and songs, calligraphy and traditional Chinese painting and Beijing Opera and Kun Opera, etc. Each section is consisted of several chapters, making it convenient to select materials in accordance with actual teaching.The textbook has the following features:I. Rich in content, extensive but not difficult in knowledge and very practical and workable.From the perspective of quality education, it consciously reflects concepts of quality education and collects and discovers the most representative and splendid elements in Chinese traditional culture, which optimizes teaching contents and makes the textbook different from other course books.II. It is interesting and can be appreciated for it uses not only texts but pictures; each unit has supplementary exercises with moderate difficulty, realizing the functionality of knowledge learning of textbooks and making this textbook different from other ordinary culture reader.III.
