本书包括二十章内容，分为三大部分。第一部分内容为进入食品的化学迁移的法规和质量控制，主要包括对美国、欧盟的食品接触材料法规的介绍和分析，以及对食品接触材料可追溯性相关法规和行业指南的阐释；第二部分内容为风险评估和食品接触材料安全性，主要包括食品接触材料化学迁移的符合性测试、暴露评估、基于毒理学的风险评估以及迁移的数学模型研究；第三部分为特定食品接触材料的化学迁移，包括了回收塑料、塑料、金属包装、橡胶、食品包装用油墨和清漆等内容，并有两个研究实例。（The book consists of twenty chapters, which are divided into three parts.
