As sugar art is aesthetically pleasing, durable, bright-colored, impressive in size, clean and safe, and easy to learn, sugar art has been growing in importance in the catering industry in recent years. All sugar artworks of flowers, birds, fish or insects, or large animals are vivid and lifelike. In the beginning phase of sugar art application in Chinese catering industry, it used to serve mainly as dish decoration. Sugar art show pieces were small in number and poor in variety. But with the rapid development and popularization of sugar art, it is no longer confined to small-scale dish decoration, and begins to present itself in the form of large show pieces, with a wider range of subject matters, consummate skills, unique styles and myriad techniques, which could rival and even surpass the traditional pumpkin, turnip, foam, ice and butter sculpture show pieces in China. Sugar art has become an indispensable part of food decoration in Chinese catering industry.
