Eggs are good food whether eaten by themselves or combined with other ingredients. Alone they provide simple dishes but with other items they can be part of complex and sophisticated meals. Even an inexperienced cook can make a good job of cooking eggs. Omelettes are said to be difficult to cook but this is probably a psychological problem rather than a practical one. The most commonly eaten egg is that of the chicken but many others kinds are also consumed. The eggs of ducks, quail and geese are commonly used. In England plovers eggs area delicacy. The eggs of ostriches and emus are also eaten in some places. Fishes eggs, or roe, are also good eating. Of the sturgeon the eggs are known as that expensive speciality, caviar. Here we are concerned with the common chicken's egg.
