Recipe for Mother's Real Angel Food Cake:
Sift 1-3/4 cups cake flour with 1/2 cup sugar. Beat 12 egg whites with 1-1/4 tsp cream of tartar until soft peaks form. Gently fold in the flour mixture and then fold in 1-1/3 cups more sugar. Add 1/3 tsp almond extract. Bake in ungreased 10 inch tube pan 375 for 35–40 minutes. (p. 155)
