This chapter reviews the origins and development of the Codex Alimentarius Commission, established by the United Nations (UN) Food and Agriculture Organisation (FAO) and the World Health Organization (WHO). It describes the Codex organizational structure and standard setting process. The chapter goes on to review the main achievements of Codex in promoting global food safety and quality, as well as the current and future challenges facing the organization.
