I became interested in vegan cheese when I had to cut back on dairy because of health problems, especially with my digestion and skin. I was having stomach problems, anxiety, and skin problems, and I found that I felt much better when I stopped eating dairy. I started looking into nut cheese and was hooked after making cashew cheese for the first time. It really blew me away, and I can't stop wanting to wow people away.
I don't think of myself as a vegan. I just like the challenge of making vegan food, and I feel best when I try to eat a whole-food, plant-based diet. So it was a no-brainer for me to try vegan cheese, and I can say for sure that I don't miss dairy!
But that's also why this cookbook is so great! You don't have to be a vegan to enjoy any of these recipes. Everyone should be able to enjoy these recipes.
