Ingredients:

1 cup quinoa, rinsed
1 1/2 cups vegetable or chicken broth
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons freshly squeezed lemon juice
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
4 (4-ounce) salmon fillets

Instructions:

In the Instant Pot, select the "Sauté" function and heat the olive oil.

Add minced garlic to the pot and sauté for about 1 minute until fragrant.

Turn off the "Sauté" function and add rinsed quinoa, vegetable or chicken broth, lemon zest, lemon juice, dried thyme, dried rosemary, salt, and black pepper to the pot. Stir to combine.

Place the salmon fillets on top of the quinoa mixture in the Instant Pot.

Secure the lid on the Instant Pot, making sure the valve is set to "Sealing."

Select the "Manual" or "Pressure Cook" function and set the cooking time for 4 minutes on high pressure.

Once the cooking is complete, allow for a natural pressure release for 5 minutes, then carefully release the remaining pressure by turning the valve to "Venting."

Open the Instant Pot and fluff the quinoa with a fork.
